If you know me. You know I hate cooking. Mainly because I suck at it.. All recipes I cook have to be very simple and quick. I believe one day once I dont have work and I am home with kids I will become a better cook, when that day comes I will have plenty of time to perfect recipes ( I know my life will just get busier with kids) but I can dream, or give my husband some hope.I am proud to say tonight you can call me Chelsey Crocker. I made a good, perfect dinner for once.. Cream Cheese Chicken..
4-5 boneless/skinless chicken breasts (I only did 2)
1 cube of butter or margarine
1 Good Seasons Italian Salad dressing envelope
1 Can cream of chicken soup
4oz-8oz cream cheese
-- Mix envelope of dressing and melted butter together (I usually just let the butter melt in the crockpot then sprinkle in half the dressing mix) Lay the breasts in the crock pot and pour the rest of the dressing mix on top. Cook in the crock pot on low 4 to 6 hours ( 4 was prefect for us) Remove the chicken breast and place on separate plate. Put can of cream cheese and cream cheese into the butter mixture in the crock pot. Cook until hot and cream cheese is melted. Serve over rice... Waaaala! Best part about this meal was the 5 min clean up thanks to my handy dandy Crock Pot liners. Go buy some now.
After dinner we decided we didnt want to sit home and watch TV, most likely due to the fact I made Mitch watch 5 hours of The Hills last night.. ahem.. so we decided to head up the canyon and drive the Alpine Loop...

It was so nice to get out of the house and enjoy being up in the mountains. So beautiful up there. I think Milo enjoyed it the most, we let him get out of the car every now and then and explore and he would go wild... We had to keep a close eye on him because he is much smaller than all the overgrowth, and I was terrified something was going to snatch him. Mitch is now trying to talk me into camping this weekend.. Anyone with bear repellent is invited!

5 hours isn't that bad, I am sad to say I watch most of the Hills marathon this past weekend (Sat and Sunday). Although Dan didn't watch most of it, we didn't do anything because I was glued to the TV.
drives up the canyon are the best! its okay i have the worst fear of bears..or just creepers in general! but camping is always fun!
This is one of my families favorite recipes ever. We like it over penne pasta though. Yum! :)
